How good does this sound? Think about it: You’ve got the barbecue on. The chef’s apron wrapped around you. The burgers are done. And when it’s time, you will the plate with Cheesy Sour Cream Potatoes and whatever else you want to serve ( nothing is going to be able to upstage this dish, so don’t put too much energy into things like coleslaw). It’s a hit. It’s good for weight loss
Guess what else you can do with this little cheesy potato-ey number? Breakfast.
scramble up some egg whites and load’em onto a pile of these potatoes.
4 medium russet potatoes, cut into 6 wedges each
non-stick cooking spary
1/2 tsp salt
1/2 tsp pepper
2 cups grated nonfat cheddar cheese ( good for weight loss)
1/2 cup nonfat sour cream
1 tbsp. chopped parsley
Boil potatoes until just tender. Do not overcook or they will fall apart. Preheat oven to 400 degrees. Spray shallow baking dish with non-stick spray. Place potatoes in baking dish, sprinkle with herb mixture, salt and pepper. Place in oven about 35-40 minutes, until brown. Sprinkle with cheese. Bake 5 minutes more, until cheese is melted. Pour sour cream on top. Sprinkle with parsley.
