Marinated Tofu-Vegetable Kebabs is vegetarian and low in fat, good for weight loss. Taste better if want Tofu is firmer. Really Good Dish. If you have time, press the tofu before cutting it to make it even firmer: Place it between two plates and weight to top plate with 2-3 soup cans. Let stand 1 hour, then pour off the water.
Make 4 Servings
1/4 cup fresh lemon juice
2 tablespoons reduce-sodium soy sauce
4 teaspoons Asian sesame oil
1 tablespoon grated peeled giner root
1/2 teaspoon crushed red pepper flakes
1 pound firm tofu, cut into 24 cubes
2 medium zucchini, cut into 1″ cubes
1 red or yellow bell pepper, seeded and cut into 1″ pieces
8 small mushrooms
8 cherry tomatoes
In a shallow bowl, combine the lemon juice, soy sauce, oil, gingerroot, and pepper flakes; add the tofu, zucchini, bell pepper, and mushrooms. Let stand at room temperature, stirring occasionally, at least 2 hours.
If you are using bamboo or wooden skewers, soak eight 12″ skewers in cold water about 1 hour
Preheat the broiler, thread the marinated vegetables, tofu, and tomatoes onto the skewers; place the kekbabs on the broiler rack. Broil. basting with the marinade, until the vegetables are slightly charred and the tofu is browned, about 5 minutes on each side. Brush with any remaining marinade before serving.
Tip: If you find reduced-fat tofu, use it to save on Fat grams.
