Tofu Provencal

Want to have low fat diet and weight loss? Try our Tofu Provencal. Yummy and It’s Vegetarian. Tofu packs a lot of heart-healthy soy protein, but it can contain a lot of fat. Look for light tofu, now available in most supermarkets and health-food stores.

Makes 4 Servings

4 teaspoons olive oil

1 red pepper, seeded and thinly sliced

1 medium zucchini, thinly sliced

2 teaspoons finely chopped fresh thyme, or 1 teaspoon dried

One 14 1/2-ounce can diced tomatoes

1 1/2 pounds firm tofu, cut into 1″ cubes

Salt and freshly ground pepper, to taste

1/4 cup chopped basil

In a medium non-stick skillet, heat the oil. Add the bell pepper; saute until it begins to soften, 2-3 minutes. Stir zucchnini and thyme; saute until the zucchini begins to turn golden, 4-5 minutes.

Stir in the tomatoes; reduce the heat and simmer, partially covered, stirring occasionally, 10 minutes. Stir in the tofu, salt and pepper; simmer, uncovered, until heat through, about 5 minutes longer. Stir in the basil just before serving.

Tip: Tofu can provide lots of calcium- if it was mad with calcium sulfate. Check the labels to be sure.
