Tofu Stir-Fry and Weight Loss

Want to have low fat diet¬† and weight loss ? Try our Tofu Stir-Fry. It’s Vegetarian, Low in Fat, and very tasty. Don’t want to miss it. With little flavor of its own, tofu takes on the flavors of the dish in which it cooked. Here, Asian flavors spark the tofu to create a spicy, satisfying stir-fry.

Makes 4 Servings

2 1/2 teaspoons canola oil

1/2 carrot, diagonally sliced

2 tablespoons grated peeled gingerroot

1 pound broccoli (peel the stem), cut into bite-size pieces

1/4 cup low-sodium vegetable broth

1 pound firm tofu, diced

1/2 cup thinly sliced shiitake mushroom caps

1 red bell pepper, seeded and julienned

1 cup snow peas, trimmed

 1 tablespoon + 1 1/2 teaspoons soy sauce

1 1/2 teaspoons Asian sesame oil

Pinch crushed red pepper flakes

Heat a large non-stick skillet or wok with a lid over high heat; heat the oil. Stir-fry the carrots 1 minutes; add the ginerroot; stir-fry 30 seconds. Add the broccoli and broth; stem, covered 2 minutes, then stir

Add the tofu and cooking, stirring, 1 minutes. Add the mushrooms, bell pepper; stir-fry 3 minutes. Add the snow peas, soy sauce, sesame oil and pepper flakes; stir-fry 1 minutes.
